A No-Recipe Salad: Part Two, or The Salad That Will Change Your Life!




If you read my last blog, and your life didn't change, read on.  This blog is intended to show you how versatile and liberating this no-recipe thing can be, and how easily you can create delicious whole grain salads that suit your taste buds.

Cook up some whole grains like this:


My favorite whole grain combination: wild rice, wheat berries, barley.

Divide this into equal portions in 4 separate bowls.  Each of these we will make into a different flavor, so although the background (whole grains) doesn't change, you will not feel that you are eating the same thing. To each bowl of whole grains, you can add an incredible variety of ingredients. 



Let's start with a Mexican Salad.  Your additional ingredients might be some type of bean, corn, diced hot chili pepper, cherry tomatoes and cubes or slices of avocado.  Use some pico di gallo for the dressing, or make a vinaigrette using taco seasoning. 


Mexican Flavors: corn, black beans, cherry tomatoes, and avocado on quinoa.

Using the same whole grains you can make a Greek Salad.  Crumble up some Feta cheese, seed and dice a cucumber, toss in some Kalamata olives.  Use fresh lemon juice, oregano and thyme for the vinaigrette.  

Greek Flavors:  Kalamata olives, feta, cucumber.

You like Asian flavors?  Here are two ideas:  
First:  water chestnuts, scallions, peas and peanuts.  Make your vinaigrette with freshly grated ginger, and use peanut oil.
Hawaiian:  Craisins, pineapple, peas, scallions and peanuts.

Second:  Mandarin oranges, sliced scallions, craisins, diced and seeded cucumber.  Make your vinaigrette with a splash of soy sauce, rice wine vinegar, and walnut oil. 
Leafy Salad with carrots, beets, egg, chicken and whole grains.

I sometimes just throw together a leafy salad with some whole grains on top too.  You can add just about any protein you like also:  Shrimp, Chicken, Bacon, Eggs, whatever you like.  
Green Salad with grains, almonds, vegetables.


Get creative!  The combinations are infinite and each one will taste just the way you like it!
