I have always disliked leftovers. That beef roast, pork roast, or steak, that was great for dinner loses its appeal once it’s cooled for a night. Those side dishes—not so tasty after they were served the first time. Often times, they sat in the fridge until I had to throw them out because they were beyond their prime.
Now I have learned ways to make my leftovers into something that doesn’t seem old, drab, tasteless, and dull. Sometimes it’s a matter of cooking enough for the meal I’m making, and the one I plan for later.

I wanted to make a nice stuffed flank steak for dinner one night, so I cooked up some wild rice, hard cooked eggs (since I was in the kitchen) and roasted some fresh asparagus and beets.

In a bowl, I mixed up some blue cheese, cream cheese, and
shallots for the filling. I spread that
on the butterflied steak, topped it with some roasted asparagus and rolled it
up.

Our dinner that night was wild rice,
stuffed flank steak and a simple everyday salad.

I went through my
fridge to see what else I had on hand, and came up with this salad:

This salad has quartered hard-cooked eggs, fresh broccoli,
cherry tomatoes, green leafy lettuce, carrot salad, bean salad, beet salad, and
roasted asparagus.
Because everything was kept separate, I could also make this
salad for my lunch the next day:
This time I used leftover chicken, leftover cooked grains,
and many of the same things from the night before. I promise you it was a delicious as it
looks—BOTH times!
