Safety and Knife Skills: Know what you're doing

Cutting zucchini is very similar to cutting carrots in the approach.





First you make sure to have a flat surface by cutting the zucchini in half if it's small,  or for large zucchini, thinly slicing off a side so you can lay it flat. 

 Cut the halves into narrow slices and line them up on your cutting board.


 Cut several pieces all together into small dice.
You can saute this in a pan with other vegetables for a quick side dish:
Add salt, pepper, and a splash of wine or lemon juice.  Mix in with cooked whole grains, cooked pasta, top a salad, or throw into an omelet.
