Summer Caprese Salad or Appetizers

The tomatoes are ripening, the basil plants are lush and full.  It's time to enjoy Caprese!




Ready to eat!



 Grab some small cherry tomatoes, cut up some fresh mozzerella, pick some basil leaves, and you are ready to make this. 
Make a platter of these for a crowd. 

This is an easy appetizer and makes a great presentation. 


Another great way to do this is by coating bocconcini in pesto, skewering it with tomatoes and putting it atop fresh lettuce.  You can dress the lettuce in a balsamic vinaigrette for a first course salad.

Continue adding to your platter until it's full.

Sprinkle some good balsamic over it all.
